Crispy Skin Salmon and Potato Salad

A quick, easy and satisfying meal for the whole family. The salmon can be cooked in the oven at 180 degrees celsius or in an air-fryer at 200 degrees celsius for 15 minutes - either way, the skin will be nice and crispy!

Ingredients
Salmon
 4 fillets salmon (skin on)
Potato Salad
 4 potatoes (skin on) cut into small cubes
 1 tsp olive oil
 4 rashers shortcut nitrate-free bacon
 4 sticks celery chopped
 4 tbsp dill diced
 3 shallots diced
 1 handful rocket leaves
 Cracked Changing Habits Pepper to taste

Preheat oven to 180 degrees celsius.

Place the salmon fillets skin up on a lined baking tray. Bake for 20 minutes.

Potato Salad

Place the potato in a pot of water, heat over a high heat.

Boil for approximately 15 minutes or until you can easily cut through a piece of potato. Remove from heat, strain the water and set aside to cool.

Heat a fry-pan over a medium-high heat, add the oil.

Fry the bacon until crispy. Remove to cool and slice.

Transfer the potato, bacon and the rest of the potato salad ingredients into a bowl. Mix well.

Split the salad between 4 plates and add the salmon.
