Gluten Free Lemon Cake

A simple but tasty lemon cake. The perfect little accompaniment to an afternoon cup of tea or coffee.

Ingredients
 1/4 cup melted coconut oil
 4 eggs
 juice of 3 lemons
 1/3 cup maple syrup
 zest of 2 lemons
 1.25 cup blanched almond meal
 1/3 cup coconut flour
 1.5 tsp baking soda
Directions

Preheat oven to 180 degrees Celsius.

In a bowl whisk the coconut oil, eggs, lemon juice, maple syrup and zest.

Slowly sift in the almond meal, coconut flour and baking soda until well combined.

Transfer mixture into a lined loaf tin.

Bake for approximately 35 minutes or until cooked through. Remove to cool.
