Okonomiyaki

Our take on the popular Japanese dish - Okonomiyaki. A savoury pancake made with cabbage and topped with salmon and vegetables.

Ingredients
Okonomiyaki
 1/2 a cabbage, shredded
 4 eggs
 1/4 cup Changing Habits Emmer Wheat Flour
 1/2 cup water
 1 tsp Changing Habits Vegetable Stock Powder
 1 tsp sesame oil for frying
Topping
 1 tsp sesame oil for frying
 1 capsicum, sliced
 6 mushrooms, sliced
 1/2 a bunch broccoli, chopped
 1 fillet skinned salmon
 1 avocado, sliced
 2 shallots, chopped
 1 handful baby spinach, chopped
 Squeeze of Easy Olive Oil Mayo
 Squeeze of Homemade BBQ Sauce or Teryaki sauce

Okonomiyaki

Mix okonomiyaki ingredients together in a large mixing bowl.

Heat a small fry pan over a medium heat. Add the sesame oil, spoon the mixture into it and cook for approximately 5 minutes on each side. It should make approximately 2-3 okonomiyaki. Set aside.

Topping

While the okonomiyaki are cooking, start with the topping.

In a separate fry pan over a medium-high heat, add the sesame oil, capsicum, mushrooms and broccoli and cook until soft and fragrant. Set aside.

Using the same pan, fry the salmon for approximately 3 minutes on both sides (or until cooked through). Set aside.

Assembly

Plate up the okonimiyaki (one on each plate).

Top with the cooked vegetables and salmon.

Add the spinach, shallots and avocado and finish with a good squeeze of Mayo and BBQ (or Teriyaki sauce).
