Dukkah is a tasty, nutritious combination of nuts, seeds and spices which can be added to food for a little extra flavour and crunch! Goes well with eggs, vegetables, soups or salads.

Ingredients
 1/4 cup pistachios
 1/4 cup cup cashews
 1/4 cup almonds
 1/4 cup hazelnuts
 1/4 cup coriander seeds
 1/4 cup shredded coconut
 2 tbsp sunflower seeds
 1 tbsp cumin seeds
 1/4 cup sesame seeds

Preheat oven to 180 degrees celsius.

Spread the pistachios, cashews, almonds and hazelnuts on a lined baking tray and roast for approximately 10 minutes or until the cashews start to brown. Remove to cool.

On a separate lined baking tray roast the sesame seeds until they start to brown. Remove to cool.

In a pan over a medium heat, toast the coriander seeds until fragrant - approximately 2-3 minutes. Remove to cool and use the same pan to toast the shredded coconut and cumin seeds until the coconut begins to brown. Remove to cool.

Add all ingredients apart from the sesame seeds into a food processor and pulse a couple of times until you reach the desired consistency. Add the sesame seeds and salt and pepper.

Transfer into an air-tight jar and store in the cupboard.
